The Road to Mandalay Bay Hotel runs through the south end of the Las vegas Strip. The 3,700-room, $950 million Mandalay Bay occupies the former site of the Hacienda Hotel and Casino; it is the first of a series of developments expected to blossom on the "miracle mile" of resorts under the Mandalay Resorts flag at the top end of the Strip. An automated tram links Mandalay Bay to the Excalibur and Luxor resorts. Mandalay Bay's attractions include an eleven-acre tropical lagoon featuring a sand-and-surf beach, a three-quarter mile lazy river ride, and a swim-up shark tank; and world-class restaurants created by top-rated chefs behind some of the most acclaimed restaurants in New York, Los Angeles, and Miami.

Among the more many unusual offerings is Rumjungle, located along the hotel's restaurant row, nicely isolated from the beeps and squawks of the casino. Water cascades down dramatic glass walls throughout the eatery; the­ atrical lighting sets the mood late at night. Live cocktail lounge entertainment starts nightly at 11 P.m. The menu spreads across Latin, Caribbean, and African fare; the restaurant is from the creators of China Grill.

A star offering is the Fire Pit dinner, served to everyone at the Mandalay Bay Las Vegas table. Dish after dish of salmon roasted in a banana leaf, grilled corizo, Martiniquan lamb skewer with green curry coconut glaze, hulihuli chicken, and more. Adults, about $34, children $19. Across the row is Wolfgang Puck's Trattoria del Lupo, an upscale restau­rant set within a small piazza in Milan with views of the pasta, charcuterie, and bakery production areas. The menu focuses on Northern and Southern Italian specialties and include Puck's well-known exotic pizzas. Entrees include roasted Alaskan halibut with lemon and pancetta, for about $24, and braised lamb shank with caramelized onion and saffron, for about $26. The 200-seat restau­ rant is open for lunch and dinner. A huge statue of Lenin, in headless post Cold War form, stands outside the elegant and quirky Red Square, an outpost of Miami's South Beach original.

Decorated in Romanov splendor, in red and black with onion domes and high ceilings, the Mandalay Bay Hotel restaurant's showpiece is its extensive vodka collection that includes private vodka lockers; the bar offers more than a hundred varieties as well as all manner of infusions, martinis, and cocktails. One star of the menu is kulebyaka, a fillet of salmon filled with mushroom, egg, and fresh dill wrapped in a puff pastry. Other offerings include filet Stroganoff, chicken Kiev, and Roquefort-crusted filet mignon. Entrees range from about $17 to $30. The restaurant serves dinner only. The fanciest and liveliest lobster pound in town is Rock Lobster, at the point of the V-shaped restaurant row, and closer to the casino floor. Dishes, priced from about $8 to $30, range from burgers, and lobster pot pies to steak, shrimp, salmon, and lobster dinners. Specialty drinks follow the same theme, with libations including Bloody Shrimp, the Lobster Trap, and Soused Lobster.

The ultra-chic Aureole is a cousin to Charlie Palmer's acclaimed New York restaurant, featuring seasonal American dishes. The interior of the 383-seat room was designed by the eclectic Adam Tihany, centered around a unique four-story wine tower; wine stewards strap on harnesses and are hoisted up the tower to make selections from the "cellar in the sky." Aureole is open for din­ ner only. An elegant turn to the far east, Shanghai Lilly is encased in polished wood, mirrors, and glass; dishes are served on fine Limoges china. Chinese entrees, ranging from about $16 to $75, include basics like Kung Pao chicken and moo shu pork to unusual and pricey offerings like abelone with sea cucumber, shark's fin with Dungeness crab or Maine lobster sashimi.

Across the row is China Grill, described as a China-inspired brasserie. Mandalay Bay Hotel broader menu reaches across Asia, with offerings from China, Korea, Japan, and elsewhere. The eatery is part of a group of restaurants in New York, Miami Beach , and Beverly Hills. Entrees, ranging from about $26 to $60, include a massive two-pound Porterhouse steak with kimchi and orange maple dressing, Japanese Panko-crusted veal, and sesame-speckled skate. The Border Grill, a modern and upscale version of a southwestern taque­ ria, is a Los Angeles favorite owned by the "Too Hot Tamales" pair of Mary Sue Milliken and Susan Feniger. Its gourmet Mexican fare for lunch and dinner fea­ tures dishes such as grilled skirt steak with garlic and cilantro, sauteed rock shrimp with toasted ancho chilies, and grilled breast of turkey. One unusual dish is mulitas de hongos, which layers grilled Portobello mushrooms with guacamole, manchego cheese, black beans, poblano chiles, and tomatoes. Entrees are priced from about $18 to $25; lunch prices are a bit less expensive.

Just off the Mandalay Bay Hotel in Las Vegas casino floor is the 600-seat House of Blues, largest restaurant in the hotel, offering down-home cooking and music. A larger concert hall is nearby. Entry to the Mandalay Bay Hotel restaurant is through a version of a Mississippi backyard with candles hung from low-hanging trees and a constant symphony of crick­ ets. Specialties, priced from about $14 to $20, include slow-cooked baby back ribs, Creole jambalaya, and crawfish and shrimp etoufee. The restaurant offers a gospel brunch on Sunday mornings. The 504-seat Mandalay Bay Side Buffet includes "action stations" for breakfast, lunch, and dinner. The Verandah Cafe at the Four Seasons offers indoor and outdoor seating for breakfast, lunch, and dinner including Mexican, Californian, Ital­ ian, and Oriental food. Room rates at the Mandalay Bay Hotel range from about $100 to $299 ( subject to change), with specials during slow times of the year and higher prices during holidays and convention periods.

The Four Seasons at Mandalay Bay is a hotel within the hotel, occupying 424 rooms on the thirty-fifth through thirty-ninth floors. The premium hotel, owned by Mandalay Bay but managed by Four Seasons, has its own entrance, check-in, five-star dining, pool and spa, and convention area. Room rates at Four Seasons are among the highest in Las Vegas, averaging a bit under $200 per night.

The Hacienda was imploded, on national television, on New Year's Eve at the end of 1996. When it was built in 1956 near McCarran Airport, the Hacienda was miles away from the rest of the Las Vegas action. The Hacienda was a haven for low rollers. Among its pioneering efforts were some of the first gam­bling junkets; at one time it maintained its own fleet of thirty airplanes to bring the sheep in to be shorn. During the years, though, the Las vegas Strip extended south to encompass the Hacienda and eventually it found itself in the reflected gaudy glow of the Excal­ ibur, Luxor, and the nearby MGM Grand. The Hacienda and some forty-seven surrounding acres were purchased in 1995 by Circus Circus Enterprises; the company also bought seventy-three acres to the south of the Hacienda at Rus­ sell Road . In 1999, Circus Circus renamed itself Mandalay Resort Group.
