Actually, in a perfect Las Vegas remake, Elvis has been replaced by a passel of Ferengis, Romulans, and the crew of the USS Enterprise at Star Trek: The Experience at the Las Vegas Hilton. The Experience is part theme park and part futuristic casino. The three thirty-story towers include 3,174 rooms and suites. The 1,500-seat showroom, used for major shows and boxing matches, has one of the largest stages in Las Vegas. The SpaceQuest Casino, though, is quite a trip, with a setting that places you aboard a futuristic space station orbiting 1,500 miles above the earth. Glance up to catch the view through three large space windows that reveal the earth below as well as space limousines picking up and deliv­ering the highest of the high rollers. There are more than 400 slot machines at SpaceQuest; this is the future, so instead of pulling a slot handle, you can spin the wheels by passing your hand through a light beam. There is, of course, a gift shop and a spacey bar at the Las Vegas Hilton Hotel.

Standard room rates start at about $85 but can climb sharply-if available at all-during conventions. The best rates can be obtained at Christmas time, with the exception of New Year's Eve. Classic Suites on the upper floors are for high rollers only. Three fabulous "sky villas" at the top of the Hilton include the 12,600-square­ foot Villa Conrad, a two-story home away from home decorated in French style; the larger Villa Tuscany, which has a private garden; and the 15,400­ square-foot Villa Verona, modestly modeled after the Palace of Versailles. The Las Vegas Hotel Villa Tuscany includes a bathroom that has gold-plated bathtub faucets and a fireplace. The lush draperies sweep aside to reveal a spectacular view of the Spring Mountains and the man-made marvel of the Las vegas Strip. If the interior feels too confining, the guest can step out to a private putting green and pool. And, of course, a butler and private chef are on call at all times.

As with other super-suites at Caesars Palace, The Mirage, the MGM Grand, and elsewhere, the suites are priceless-mere visitors to Las Vegas cannot rent them at any price. All of the fuss is aimed at enticing an estimated 200 of the world's richest gamblers, almost all of them foreigners. The fanciest restaurant in the Las Vegas Hilton building is Bistro Le Montrachet, which is very French. A wine cellar offers more than 400 varieties. And, check out the beautifully sculpted pear in a sugar cage at the entrance. Among the specialties, priced from about $32 to $36, is le filet de Saint Pierre (poached filet of John Dory with leek pasta in a creamy saffron, wild mushroom, and tomato sauce). Open for dinner only from 6 to 10:30 P.m.; it is closed Tuesday and Wednesday.

The Reef is a seafood restaurant at Hilton Hotel Las Vegas that offers an upscale setting and menu. Spe­ cialties on a recent visit included sauteed scallops with mushroom shallot cream, Dijon herb crusted halibut, and broiled twin Australian lobster tails.Andiamo is the home of Northern Italian specialties and homemade pasta, offered daily for dinner from 5:30 to 10:30 P.m. Closed Sunday and Monday. There's an impressive espresso and cappuccino counter at the entrance, and diners can see the chefs at work behind a glass wall. Special­ ties include medaglioni di vitello andiamo (two veal medallions sauteed and served with creamy rosemary sauce and asparagus), and costoletta di vitello con spugnole (Provini veal chop sauteed with morel mushrooms and pine nuts in marsala sauce).Benihana Village features two traditional Japanese restaurants, Hibachi and Robata. At Hibachi, chefs chop, slice, and grill your food at your table. Offerings range from about $15 to $40. Robata offers seafood specialties, pre­pared in Japanese fashion. Dinner is complemented by the animated musical show "Jambirdee" and a fireworks display over the Benihana Musical Waters.

The Garden of the Dragon features gourmet Chinese dishes from 5:30 to 10:30P.M. In addition to basic Chinese fare, you'll also find some unusual offer­ ings such as sizzling lamb (tender lamb loin sliced with Chinese fresh vegeta­ bles, served sizzling at the table) and steamed whole flounder (whole flounder steamed in the Cantonese style and garnished with scallions, ginger, and soy sauce). Prefixe dinners are about $22 to $27; individual entrees are also sold.

The Hilton Steakhouse offers charbroiled steak, ribs, fish, and chicken priced from about $18 to $52. Open 5:30 to 10:30 P.m. Offerings include sev­ eral cuts of steak, such as a 36-ounce double New York strip sirloin for two, priced at nearly $60; center-cut pork chops; and large-cut filet mignon. Other entrees include fresh swordfish steak, skewer of tiger shrimp, and lemon oregano chicken. Also available at Las Vegas Hilton is MargaritaGrille, a casual Mexican restaurant. Offerings include albondigas (Mexican vegetable soup with meatballs), chili con queso, fajitas, chimichangas, flautas, and burritos.

The Buffet of Champions is open for breakfast during the week from 7 to 11 A.M.; lunch is served from 11 A.M. to 2:30 P.M.; dinner is from 5 to 10 P.M.
